Prepare the strawberry basil salsa first. Use fresh fruit & veg. Get your Salmon from a decent fishmonger too. No shortcuts either!!!.
*For added awesomeness, serve with a good White Pinot Noir wine.
340 gram salmon fillet, skin on
2 tablespoons vegetable oil
For the strawberry basil salsa
2 cups strawberries, small diced
¼ cup red onion, small diced
1/2 cup loosely packed fresh basil leaves, very finely sliced into ribbons
¼ cup loosely packed fresh mint leaves, very finely sliced into ribbons
1 tablespoon red wine vinegar
1 tablespoon olive oil
kosher salt to taste
